Tham’s Roasted Delight: Affordable Peking Duck By Ex-Imperial Treasure Chef In AMK Coffeeshop

Located in the newly opened Food Haus in Ang Mo Kio with a brightly lit space and neon signs. The most Instagram-worthy coffeeshop has also brought in famous stalls such as Bangkok Street Mookata and Ng Kuan Chili Pan Mee, but you would be spoiled with choices as Hola Western and Niu Xiao Er Dong Bei BBQ is also under the same roof.

Having garnered a fair bit of the media's attention, you can expect the queue at Tham's Roasted Delight to have at least a half an hour wait during peak timings.

Only 10 peking ducks available daily

With the limited number of peking ducks available daily, it is recommended to preorder in advance before making a trip down to the stall.

The peking duck (S$50 for whole/S$26 for half) is prepared upon your arrival, with an estimated waiting time of 30 mins. If you are looking forward to the "full experience", do also note that the duck is carved at your tableside only after 5pm, due to constraints during the lunch rush hours.

The skin was carved and served in mainly two ways - skin only or with some meat. With the chef's prior work experience at Imperial Treasure and Crystal Jade, you can certainly expect the peking duck skin to be crispy. If you like juicy, melt-in-your-mouth fats, you would love that the big slices of the skin have a layer of those juicy fats. Albeit you can also request for a leaner duck, but subjected to availability.

Apart from the slices of fresh cucumber, leek, egg crepes and hoisin sauce, you would also notice the additional sugar granules on the side. Best paired with the crispy skin itself, the sugar-dipped duck skin has an enhanced caramelised flavour.

Instead of having the options of the meat served in a different style (i.e., stir fried), the remaining meat of the duck is simply sliced and served. Granted that peking duck is notorious for having dry meat due to its long cooking time, but you can expect the duck meat at served here nothing short of tender and juicy.

If you're dining alone, they also have single serving of roast duck rice (from S$4) or honey char siew noodles (S$4.50) as per most roast meat hawker stalls. But the homemade chili is probably the highlight of the basic staple. Spicy chili lovers would not want to miss out on the fragrance of the special chili which had a prominent taste of hae bi hiam (dried shrimps) with a slight crunch from the deep-fried garlic.

The honey char siew is a sweeter rendition with an evident smoky profile. The roasted pork was well marinated and satisfactory with its layers of thick fat and tender meat, although the airy crisp skin could have been thicker, and some pieces had unfortunately turned soggy (due to the sauce).

For a wider variety, you can go for 3 combo platter (S$18) or 4 combo platter (S$24) for the roast duck and steamed kampong chicken.
