Malaysian Hup Kee Fishball Noodles: Handmade Fishball Noodles Sold Out By 12pm Daily

You might be familiar with the teochew-style fishball noodles that are commonly found in local hawker centres or coffee shops and usually dosed in a spicy chili mix or tomato sauce with vinegar and shallot oil (if you order the dry version).

But the Malaysian-style fishball noodles and the teochew-style are nothing alike, the former has a darker sauce that lean towards a more savoury profile.

Tucked away in a coffeeshop located within Ang Mo Kio, Hup Kee Fishball Noodles serves authentic, handmade fishballs that is sure to satisfy your palate.

Only 3 items on the menu

The limited menu focuses on their fishball noodles which comes in two sizes - regular (S$4.50) or large (S$5.50).

You could also purchase just the fishball soup (S$5) that comes with 10 pieces of the homemade fishball. But this is subjected to availability.

They have the usual variety of noodles - mee pok, mee kia, or yellow noodles. The mee tai mak ("老鼠粉") was well cooked, being slightly chewy and neither mushy nor clumpy. You can also expect the dark sauce to coat thoroughly around each strand.

The sauce for the noodles is vastly similar in taste when you compare it to the ones sold across the border. You can expect the black sauce that is mixed with pork lard and shallot oil to be fragrant and yet neither too oily nor overwhelming.

Handmade from scratch

The fish paste is made purely with yellow-tail fish, without flour and no preservatives. From descaling to cleaning the insides to mincing the fish, the paste is handmade daily from scratch without the use of machinery to achieve that perfect texture.

The laborious work certainly pays off. You can expect the fishballs to be well marinated and have a soft bouncy texture. The soup also included a fried fishcake and tofu puff stuffed with meat, both of which you would find to be very juicy.

Be early to avoid sell outs

While they are stated to close at 12pm, they usually sell out before noon, so head down early to avoid disappointment. You can expect the queue to peak after 10am with a waiting time of more than 30 mins.
