Daiyusan Sushi Bar: Hidden Umbrella-themed Japanese Restaurant

A wordplay to its name, Daiyusan ("大鱼伞") has the entire ceiling filled with Japanese Sakura-themed umbrellas.

The sushi bar offers fresh and quality sashimi which drew a crowd even on a weekday night, despite being located within an industrial estate.


Chef's recommendations



The Deluxe Chirashi Zushi [$46.90] had a variety of sashimi cubes, such as salmon, tuna, hamachi, etc. You would find that the chirashi mix was lightly seasoned such that the distinct sweetness of each fish could still be tasted. The bowl had a fluffy Japanese rice base that had a prominent truffle taste and was further elevated with Russian caviar, ikura and uni. We found the portion to be good for sharing, especially if you will be having other dishes.



The Hidden Nine [$59.90] is mindfully arranged from a mild tasting fish to the marinated slices. You can expect the sashimi slices to be fresh and sushi to have a good rice ratio. Whilst each piece contained some wasabi, you can be certain that it did not have a spicy kick. Our favourite was the fatty tuna as it had a smooth, melt-in-your-mouth texture.



The Amberjack Cheek [$28] had a paper-crisp skin, with a flaky soft, juicy meat. Unexpectedly, the piece had little to no small bones as well.


Chef's specials



The specials changes frequently according to the Chef's mood. We had the monkfish liver chawanmushi, which contained chunky pieces of the liver. If you like foie gras or liver, you would find the taste to have a close resemblance. The steamed egg was also silky smooth, and the broth added an umami taste.


The verdict


Getting here by public transport can be a hassle, but both the location and dark interior of the sushi bar adds to its mysterious ambience. The dishes are slightly pricey, but you can be certain that there is a level of quality and freshness maintained.
